1 Granny Smith Apple (cubed)
1 Large Carrot (cubed)
1/2 Large Onion (cubed)
5 Cloves Garlic (minced)

1 can Coconut Milk
4 cups Water
2 tsp Red Curry Paste
1 tsp Turmeric
1 tsp Salt
–
1/2 cup Cilantro (chopped)
:: Instructions ::
Step 1 – Mince and chop the first batch of ingredients and place in a large pan with olive oil over medium heat
Step 2 – Continuously mix until golden brown
Step 3 – Once potatoes are soft enough to pierce a fork through transfer mixture into a large pot
Step 4 – Place pot over medium heat and add second batch of ingredients
Step 5 – Bring to a boil then lower heat
Step 6 – With a handheld blender liquify soup
Step 7 – Add cilantro
